modern light theme switches back to dark theme when upgrading to 2025-03

This issue is mostly for tracking the problem on the platform ui side in the light of the upcoming 4.29.0 release:

• running macOS in dark mode
• starting 2024-12-based spring tools and switching theme to light theme (preview)
• starting 2025-03-based spring tools, selecting the same workspace, theme gets switched back to dark theme (the default since my macOS runs in dark mode)

I filed this issue for platform ui: eclipse-platform/eclipse.platform.ui#2776

Let's see if we can get this fixed in platform ui. If not, we maybe need to implement something specific for spring tools here.

This is fixed in Eclipse platform and verified with the latest snapshot builds here, so closing this as fixed.
